Tomato Pesto Sandwich




OKAY. Finally. Our first evergreen tomato is ready to be picked! I almost feel like we should have a tomato "celebration"! Kinda like Thanksgiving in August! Not sure it has been worth all of the waiting and babying of THE tomato plant...but I am not complaining because it is going to be worth every bite! The question was this. What was going to be the very first thing to make with the very first tomato? Tacos? Tomato Pie? BLT'S minus the bacon? Pasta Caprese? You have no idea how I have fretted! Not really, but it just sounded good! :}

We are making one of our favorite summer sandwiches and it is going to be AMAZING with our little home grown tomato...yep.yep.yep!

Ingredients:

Sourdough bread...the best you can get!

Pesto mixed with a bit of mayonnaise

Provolone cheese slices

Thinly sliced tomato with a bit of salt sprinkled on top

Thinly sliced cucumbers

Thinly sliced red onion

Mustard

Thinly sliced lettuce

Directions:

*Take two slices of bread and lay them out on a cutting board

*Put mayonnaise and mustard on one slice

*Put pesto mayonnaise on the other slice

*Place cheese on one slice of bread and the veggies on the other slice

*Place both slices together to make a sandwich
.
*Cut sandwich in half...it is the polite way to eat a sandwich, you know...

Serve with dill pickles and KETTLE CHIPS and a BLACKBERRY MILKSHAKE with a big, thick straw.

Amigo Dip Bowls



I thought it may be fun to share a recipe for lunch instead of dinner!

As I was going through some pictures...they all seem to look the same. We love Mexican food and the proof is in the repitition of pictures and ingredients!!! :}

Here is an easy dip to make and you can take it from here: You can let me know how you spice it up to make your family HAPPPPEEE!

Amigo Dip

2 ripe avocados, peeled and cut into chunks

8 oz. cream cheese, room temp

1/2 cup Daisy sour cream

1 tsp. lemon juice

2 Tbsp. milk

1 1/2 tsp. chili powder

*Blend all ingredients together in a blender or food processor until nice and creamy

*Spread in the bottom of 4 bowls or tortilla bowls. {I made bread bowls out of leftover fry bread dough} WE LOVE BREAD!!!

*Layer the following ingredients on top:

Black beans or meat if you like... :} Depending if you want a light lunch

Shredded lettuce

Tomatoes, diced

Green onion

Olives

Sour cream and salsa

That is it!!!

Enjoy!

*This serves four

Appetizer variation: Just make it on a platter and serve it with mini tortilla chip rounds! This is perfect made up ahead of time.

Stork Bundles {Hot Basil Cheese Sandwiches}



We are all smack dab in the middle of summer and if you are like me...wishing the days were a bit longer to get everything done.

It is easy to find ourselves having no time to do special things for other people when we can't even get laundry done for our own family!

There have been so many weddings, memorial services and baby showers this summer that I can honestly not even keep up with them all, so I thought maybe you may be in the same boat!

OKAY, take a deep breath for just a second. GOOD JOB!
You all know we love taking dinners etc. but as mentioned many times before, it is not always do-able. So, here is a great alternative. How about taking lunch to the new momma? It can easily be taken while you are out on your errands...and although it has been years since I had babies...I remember how hard it was to scramble to make lunch for myself. It was usually devoured within seconds because there were things to do while babycakes was "napping" which in our case was always only about a 15 minute cat nap!

Anyhoo...your family dinner can be whipped up at the same time you are prepping lunch for your friend. Not only will you be ahead of the game for the day, but you will be so filled with joy that you were able to do something nice for somebody else! What a great lesson for your little ones to observe during the summer months! It is easy to just have fun during the summer with our children, but what a great opportunity to share with your children the value of caring for others.

NOTE: If you were unable to make it to the baby shower, you could include a wooden monogram from your local craft store for baby's nursery! Just tie a piece of fabric around the letter for a custom look. Children love picking out gifts and wrapping them. Just an idea!

Stork Bundles {Hot Basil Sandwiches}

Ingredients:

1 small jar Kalamata olives, drained and sliced

2 cups tomatoes, diced

1 small red onion, chopped

1 ½ cups mozzarella cheese, shredded

1 cup Parmesan cheese

2 cloves of garlic, pressed

1-2 tsp. sea salt…taste it and see how much you want.

Pepper to taste

6 fresh basil leaves, thinly sliced

½ cup red wine vinegar

1/3 cup olive oil

{10 hard Sarah Lee Italian Sourdough Rolls}

Directions:

*Mix all ingredients together in a large bowl.

*Take each roll and cut out a large “plug” from the bottom.

*Remove extra bread

*Stuff 1/3 cup into each roll

*Replace “plug”

*Wrap each roll with foil.

*Bake @ 350* for 20 to 25 minutes

Wrap foil packages into white linen napkins…about 15”X15”...this will give it "the special delivery" stork look. You could use a burp cloth, too.

You are ready to deliver your little stork bundles! Aren't they so cute?

Almond Chicken Panini Croissants




Our Laurissa is back from teaching in Kazakhstan, and our Caleb is off on a missions trip to Alaska for three weeks! It has been quite the adjustment! Not the "typical" summer we are used to having...

Everybody who reads this blog knows by now that we celebrate a lot with food and Laurissa's dinner back was no exception. Since she is still adjusting to the time change, I kept the dinner simple. She loves chicken salad and this is a quick recipe to put together for a special but easy lunch or dinner...especially when there is MOUNDS of laundry, errands to run, forms to be notarized, phone calls to be made, birthday cards to be written, coloring contests to enter, and BATCHES of Cracker Jacks {4th of July tradition} to be made for one very special OPA! WHEW!

Chicken Panini Croissants

6 boiled chicken breasts, boiled, cooled and diced

1 tsp. garlic salt

1 1/4 cup Best Foods Light Mayonnaise {I know. :) LIGHT MAYO!}

1 cup almonds, finely chopped {I was in a rush and did not do a good job at all!}

1 1/2 cups Monterey Jack cheese, shredded

A twist of freshly ground pepper!

Directions:

*Mix all ingredients together. You may want to add a bit more mayo.



*Slice croissants and spread with chicken filling.


*Grill on a panini grill or any other kind of kitchen grill. We have even wrapped them in foil and grilled them on low on the bbq! DO NOT BURN!

homegrown romaine in a Caesar Salad with freshly made dressing {anchovies and all!}

Picnic Peanut Noodle Salad



Here is a very healthy, easy-to-fix, noodle salad that is great for picnics. It can be made ahead of time {up to two days!} which I love! I never mix in the peanut sauce, but serve it on the side. Especially since there are quite a few people with peanut alleries. It also allows everybody to have it the way they like it! And if you happen to have leftovers, you wont end up with a heap of soggy noodles.

This makes a lot...a large Tupperware Thatsa Bowl...to be exact. So, wheather you are planning an evening picnic out,enjoying a dinner in your backyard or on your front porch, you will want to share! Another practical way to practice hospitality!

Homemade Ginger ALE...so yummy and easy!

Picnic Peanut Noodle Salad

Molasses Cookies {recipe coming soon}



Peanut Noodle Salad
Adapted from the Pioneer Woman


SALAD INGREDIENTS:
1 lb. package American Beauty Thin Spaghetti Noodles, cooked, rinsed, and cooled

Add to noodles:

1/3 of a head of purple cabbage, sliced and chopped

1 red bell pepper, sliced and chopped

1 small bag bean sprouts

1 bunch green onions, thinly sliced

3 carrots, peeled and shredded

1 bunch cilantro…or less…soaked, rinsed, chopped, and toweled off
May be made the night before and stored in large Tupperware Thatsa Bowl
Serve condiments on the side: dressing, soy sauce, Sriracha


Peanut Dressing:

Juice of 1 lime

¼ cup hot water

½ cup crunchy peanut butter

3 tablespoons sesame oil

6 tablespoons soy sauce

1/3 cup Agave Syrup {Trader Joes or Costco}

3 tablespoons fresh ginger, sliced for measuring purposes

4 garlic cloves

1 jalapeno

Blend all ingredients together in blender until smooth. Pour into a canning jar or into a recycled glass container. This will keep up to one week in the fridge.


*This salad can easily be changed. If there is something you don't like, simply leave it out and add something you and your family LOVE. If it is convenient, you can serve the pasta from a bowl and have everybody add their own veggies. A salad/pasta bar! I am sure you all have lots of ideas!

*For those of you who really really REALLY need meat...serve with BBQ Chicken or with
Toasted Sesame Beef Kabobs or leftover steak...sliced into strips!

*If it is a bit cooler out, we make up hot rice and skip the noodles...serve veggies over rice and top with sauce. It is fun to serve them in individual Chinese take out boxes while enjoying the great outdoors. {This is our homemade version of the Native Bowl Food Cart...not exactly the same, but close.}

Kim's Sandwich Bread


HI! Now we all know that yeast breads are in a league of their very own. It can be really intimidating, BUT, I assure you, this is a simple recipe with simple ingredients that you will be able to do. It may take a few trys...however...you will agree that it is worth it!

Last week Kim and her "little bird" joined me for lunch. Kim brought the bread, KETTLE chips and fizzy drink {my favorite!}. So, basically, I provided the peanut butter, jam and dishes! :} Anyhoo...the bread was PERFECT! Some homemade breads are great the first day and kinda dry and crumbly for sandwiches. Not this one...not by a LONG SHOT. It was a day old and just right for sandwiches. I am so happy I agreed to her bringing lunch. Thank You, Kim!

When is the last time you enjoyed lunch with a friend? I love it! Nothing fancy schmancy, but oh.so.fun.

P.S. I offered to make tacos, I don't think she realized I was offering my leftovers from the night before?

Kim's Sandwich Bread

Artisan Bread in Five Minutes a Day

1 1/2 Tbsp. yeast

1 1/2 Tbsp. Kosher salt

3 cups lukewarm water

6 1/2 cups white flour

Mix all ingredients together until flour is incorporated. Dough will be wet.

Cover and let raise for 2 hours.

Grease and flour two large loaf pans.

Divide dough evenly between the two pans.

Let rise for another 40 minutes.

Bake @375* for 25 minutes or until golden brown.

That's it!

You will have one loaf to enjoy and one loaf to share!

Spicy Spinach Salad



WOW! Where oh where has February gone? Are you feeling ready for Spring, yet? I am! Today was spent looking for bathroom lights since plan A did not work. Come to find out, plan B is not going to work either. So, after dinner we sat down with the best in laws...ever...and came up with plan "C". Our third plan should be a charm, right? If not, we will be resorting to good old fashioned lighting. Yep, I am talking CANDLES. And by the way, I have no idea who came up with brilliant idea of vanities and running water, but a bowl and a large pitcher of water sounded really good this afternoon after having to buy new sinks...{don't ask!}

All this to say, I was happy I planned a simple dinner!

Menu:

Fizzy drinks

Spinach

A Valentine Lunch



Happy Valentine's Day! I love Valentine's Day so much. I know every day should be Valentine's Day...and it IS...but it is fun to have one day set apart to have a little bit of extra fun.

I still get Valentine's from my Momma and I will never grow out of loving them.

Tonight, she is bringing homemade chili to us. YUMMY. We will have it for dinner tomorrow, though...since the menu is already in place for tonight. BUT, since the bathroom is still a mess and it seems the house is cluttered with tools, it will be so nice to have a homemade dinner two nights in a row! :)

What do you enjoy most about Valentine's Day? Do you have a tradition?

Well, this is short and sweet and to the point, since my hubby will be back from Home Depot soon.

It isn't every Valentine's Day that he is home, but he is this year and I am A VERY HAPPY WIFE!

Carolyn's Yummy Grilled Cheese


Do you love it when you have company drop in for dinner? We love it. There is no time to have things just so. No pressure to impress...especially if it is one of your besties!

A few weeks ago, I invited my Carolyn to join us for dinner. I had made French onion soup...it took 3 hours to carmelize the onions and when I invited her to drop in...I was so excited she didn't have dinner plans.

She brought over a plate of THE BEST GRILLED CHEESE sandwiches ever. They were devoured. Let's just put it this way, I don't think anyone cared about the soup, and I am never {I MEAN NEVER!} making a soup that takes that long to make again. You would be better off spending a few minutes whipping up these yummy sandwiches, and the kiddies LOVED them. Gone are the days of a slice of cheese and butter on bread!



Yummy Pimento, Grilled Cheese (Surprisingly Kids love these too!)

Carolyn



5 cups shredded cheese (mix of sharp and medium cheddar) Any cheddar will do, but I love Tillamook medium white cheddar and sharp.*

1 small jar pimentos

1/2 cup mayonnaise (Best Foods Light) add more if you want in to be more gooey

1 sea salt to taste

{I added 1 pressed clove of garlic}

Garlic Sourdough Bread (I like Franz/Seattle International Garlic Sourdough** sliced rounds/they sell a regular sourdough also, but the garlic really makes the sandwich complete!) The pieces of bread are big so you can cut in half and they look very rustic and yummy and the cheese oozes out a bit. A nice way to get oohs and ahhs!

5) Trader Joes Olive Oil Spray (Way easy, and you don't need butter because the sandwiches are rich) I use this for all my grilled sandwiches. It’s a mild tasting olive oil.



This should made six sandwiches depending on your bread size and how thick you spread on your mixture. I was able to make six large sandwiches.



This is so simple...I saw the recipe in Bon Appetite and modified it a tiny bit.

●I just tossed all the ingredients other then the bread & Oil in a bowl and mix a few times till the cheese and mayonnaise are blended decently. There's no perfection necessary in this. You can add more mayonnaise if you need it to hold everything together. You can also add a little mustard if you want it a bit tangy..but don't add too much without tasting first (I add about a tablespoon which I like, but my kids prefer it without)

(A hint if you leave the mixture at room temperature for just a bit it grills much better)

●Sample the mixed product several times (you really don't have to do this...but it's so good and my excuse is I have to make sure I put enough salt in)

●Get ready to grill ....when I grill my sandwiches, I grill the insides of the bread for just about 45 seconds before spreading on the cheese concoction. (You don't even need to use butter or oil.) That way, the inside isn't mushy. This works especially well if you are transporting sandwiches for a soup and sandwich night at a dear friend's house like I was.

●After you have assembled all the sandwiches, you are ready to grill.

●Spray the tops of two sandwiches lightly with olive oil, put them oil side down in the pan.

(One of the tricks to a good grilled cheese is patience and a pan that's nice and hot, say med high, but not too hot.)

●While they are cooking oil side down, spray the top. Flip over when they are nicely grilled and brown and cook the other side.

●Move sandwiches to a serving platter and cover to keep warm.***

●Repeat till you are done.

● I do mine two at a time because they are quite large and they fit nicely in my pan.

(You can also do this on an outdoor grill just make sure your flame isn't too hot or they will burn quickly!)

*If you need a lot of grilled cheese sandwiches at once, you can butter both sides of your sandwich bread and bake them on the SILPAT.  Bake at 450* for about 16 minutes.  Eight minutes on one side and eight minutes on the other side.  Shredded cheese melts much faster and makes for a better grilled cheese!

*Note...If you can spring for some black label Tillamook sharp...so good!!!

**They sell this at the Franz Bread store for under $2.00…a great deal and it freezes great. I love to have on hand for those nights when I can’t make it to the store

***These transport really well...I had a ten min drive and the sandwiches stayed warm under the foil. (They are good cold too!)

Bistro Focaccia & Monster Pretzel Cookies {October's Show-N-Tell}


Today was Show-N-Tell for the month of October. Wow time flies! I hosted our Show-N-Tell today...because it was my month to choose the date, coordinate and decide on the agenda. So, I decided to host it at my home. I served Gingered Juice, Bistro Focaccia and fresh veggies. Once again, the conversations were all over the place. Everything from our hubbie's jobs, college life, HOMECOMING, childhoods, Christmas packaging, Borders Rewards, Stress, time management, family dinners and SOMEHOW...we even talked about laundry...thanks, LINDA!

This lunch was perfect. The chopping was done last night, the Ginger Juice Concentrate was also made up in advance so that the ginger was able to TOTALLY infuse our drinks.

Here is the recipe I tweaked with my twinsie's suggestions.


Bistro Focaccia

Adapted a bit from Pampered Chef {PC used canned bread}

Focaccia Bread Base

Ingredients:

2 cups very warm water

1 Tbsp. active dry yeast

3 cups bread flour

1 cup all purpose flour {I use half white/wheat}

1 Tbsp. sea salt

olive oil


Directions:

In a measuring cup, add yeast to very warm water.

In a large mixing bowl, mix flour and salt. Add yeast water. Stir with a spoon
until dough starts to pull away from the sides of the bowl and is smooth.


Cover dough and let rise for 1 to 1 ½ hours.

With olive-oiled hands, spread dough on SILPAT. Using your knuckles...spread dough out forming holes in the dough.

Using a silicone pastry brush, spread olive oil out on bread.

Bake at 350 for 10 minutes.

Take out of oven and spread a little more olive oil on dry parts of bread.

Sprinkle peppered jack cheese on first, then the rest of the toppings and end with the Parmesan.

Bake for an additional 15 minutes or until golden brown.




Bistro Topping:

*2 cups pepper jack cheese, shredded


1 red pepper, chopped

1 {8oz.} jar marinated artichokes, drained and chopped

3 garlic cloves, minced

½ cup Kalamata olives, chopped


½ cup green olives with pimiento, chopped



*¼ cup Parmesan cheese, shredded


Need to make it up ahead of time? Mix ALL ingredients together and store in fridge. Get out of fridge and let sit out for 30 minutes then bake!

Aren't they cute little monsters? I'm sure your little ones would love these. If anybody were to have a Sesame Street party...these would certainly be fun to make.

She got the idea from Martha Stewart {of course!}

She took about one cup of white chocolate candy melts and melted it over low heat. Once it was melted, she added a tad bit of green food coloring and a half bag of pretzel sticks that she had broken up a bit.

Stir it all got stirred together.

Then let it sit for a few minutes.

Form mounds of pretzel mix on to Roulpat or waxed paper.

Cut mini marshmallows in half with scissors and pull a bit. Stick peanut M&M on top of marshmallow and then on mound for monster eyes.

Herbes de Provence Focaccia Sandwich {with Roasted Veggies}



Not to worry, there is no goose fat in this recipe! Although the French do use it quite frequently, I opted for good old fashioned olive oil and unsalted butter.

A few years back I was assigned to make this sandwich for my friend's 40th birthday celebration! Boy, was it FUN! It was a French themed party. Lots of white, black and pink baloons, candles everywhere, fun fizzy drinks, placecards and fancy glasses on the beautifully set table, this sandwich, homemade pumpkin soup, a yummy salad and lemon poppyseed cake with raspberry buttercream frosting and HOT tea.

We listened to Fred Astaire and Ginger Rogers and talked until it was time to pick up our children from school. What a fun way to spend the day!



Herbs De Provence Focaccia Sandwich {with Roasted Veggies}

¼ of an eggplant

Sea salt

Olive oil

Unsalted butter

1 9 inch round loaf of focaccia {store bought or homemade}

*If you are using storebought, after sandwich is assembled, brush the top with olive oil and sprinkle with Herbes de Provence

¼ cup Best Food Mayonnaise

1 clove of garlic

¼ cup basil pesto {Trader Joe's}

4 slices of Provolone cheese

¼ cup of roasted red peppers {Trader Joe's}

¼ lb. deli garlic turkey


*If making your own focaccia bread, bake two batches and use one half for the top of your sandwich and the other half for the bottom.

*Store bought focaccia may be sliced in half horizontally.

*Slice eggplant into half horizontally. Cut into half. Make ½ inch half moon slices and salt them. Let salt absorb into the eggplant for about 30 minutes. This will give added flavor and draw extra water out.

*Cook in a bit of unsalted butter and olive oil. Make sure to use a good pan so they don’t stick. They will brown. Set aside.

*Make your garlic mayonnaise by adding 1 minced clove of garlic to the mayonnaise. Set aside in your fridge until you are ready to assemble your sandwich.

*Spread bottom half with garlic mayonnaise.

*Spread top half with pesto{I use Trader Joe's Genova pesto}

*Add deli turkey on top of mayonnaise and place slices of Provolone cheese to top.

*Add cut up slices of roasted red pepper to top of pesto and place roasted eggplant on top of that.{I use Trader Joe's Fire Roasted Yellow and Red Peppers}

*Place top and bottom together and wrap sandwich with tin foil. Bake at 350* for about 10 minutes until warmed through and cheese starts to melt.

*Slice into wedges! Serve and enjoy!
