Scott's Firehouse Snickerdoodle Cookies

Scott's Firehouse recipes are easy, fool-proof and FAST! There is not time to diddle-daddle with meals. They can be tasty...but they need to be practical. There is always the possibility of a "call" that can take them away from the firehouse for minutes or for hours. I figure if it works for a REAL.LIFE. FIREHOUSE...it works in the REAL.LIFE.HOME...where we may be putting our own "fires" out!

Never underestimate the power of a CLASSIC SNICKERDOODLE COOKIE!

They are perfect for the beginning of Autumn as the cinnamon makes your home smell oh.so.good!  The ingredients are basic and no muss, no fuss!

My hubby doubles the recipe and so do I as they are wonderful to pre-package and to freeze...ENJOY!

This recipe is already doubled to assure you have plenty to share.

Classic Snickerdoodle Cookies

In a mixer, combine:
1 cup butter  {room temp}
1 cup shortening {I use organic}...room temp, too
3 cups sugar
4 eggs

Stir together and add to mixing bowl:

5 1/2 cups flour
2 teaspoons cream of tartar
2 teaspoons baking soda
1/2 teaspoon sea salt

Cinnamon Sugar:

4 tablespoons sugar
4 teaspoons cinnamon

Mix together and place in a shallow bowl or pie plate.

*Preheat oven to 400*
*Once your cookie dough is all mixed together, roll into balls about the size of a golf ball.
*Roll in cinnamon sugar.
*Place about 2 inches apart on ungreased baking sheet.  {I used parchment paper since my Silpats have new homes via GOODWILL!}
*Bake until light brown.  You are going for a soft cookie as they harden after they cool.
*Bake for 10-13 minutes

These are a bit blurry as they were taken out of the freezer!

Happy Thursday!

Iced Molasses Cookies

Yesterday was an over the river and through the woods to Oma's house we go kinda day. Literally! Caleb and I spent the day at out with my parents and the three little nieces. It was such a beautiful drive. The sun was out for a bit and the leaves were still beautiful and you could see the snow on the mountains in the distance. My heart was FULL. We had the bestest Thanksgiving with my hubby's side of the family and with friends...and then getting to go visit my family the next day was so great! We were invited to make doughnuts, but as soon as we got there, we sat at the table and enjoyed leftover pie! They introduced us to their new little bird Jimmy Downy. He is a most welcome spunky guest at the bird feeder that sits right outside of their dining room window. He was adorable and entertaining!! The little girls were into the bowl of nuts {in their shells} asking for help in cracking them...it is soooo the little things in life that are so sweet! They had spent the night with Oma and Opa and had helped decorate the Christmas tree on Thanksgiving night. They slept right beside the tree in a bed that had been made up with our old quilts, blankets and pillow cases. I loved seeing them all cuddled up watching movies for the afternoon. Did you ever have lazy days during the holidays? These girls will definitely have some fun memories for their memory bank! My hubby and I are now taking note on the special things my parents do and the the memories my in laws have made for our children...because we will be copying them A LOT when our children have children!!!

Anyhoo, we got all caught up on news and plans for Christmas and finally around to making the doughnuts which was most likely just an excuse to get together!!!

As Caleb and I drove home, it was a great reminder to me to take the time to bake with others. It isn't always convenient and it will take more time...but it is in such simple tasks that we are blessed to spend a bit of extra time with those we love especially when the calendar is screaming "TOO BUSY"!

I hope that this Christmas season will be a time of JOY as you reflect on the birth of Jesus. It is this baby that changed the course of History in offering us hope for eternal life!

Snickerdoodle Doodlebugs {mini snickerdoodles}

Do you know of anyone who doesn't like SNICKERDOODLES? I can't think of anyone. In fact, for most, they are a favorite! Maybe it is all the cinnamon and sugar...but I think I would like them even if I wasn't crazy about the taste of them...just because I love the NAME. Anyway, you are in for a real treat.

Last night my son walked in the door after work. He said, "Mom, the house smells sooo good and it isn't dinner." WHAT?????!! He quickly realized what he had said and quickly told his bff..."MY MOM MAKES THE BEST SNICKERDOODLES!" I didn't say a word and gave them snickerdoodles before dinner and AFTER dinner....because that is what Mommas are for, right?!

Snickerdoodles

Mix together:

1 cup butter, room temp

1 cup sugar

2 eggs

Stir together:

2 3/4 cups flour

1 tsp. cream of tartar

1 tsp. baking soda

¼ tsp. sea salt

Directions:

Roll into balls the size of walnuts.

Roll in mixture of 2 Tbsp. sugar and 2 tsp. cinnamon. {3 of each if you like a lot!}

Place 2 inches apart on ungreased baking sheet.

Bake until lightly browned…but still soft...DO NOT OVER BAKE...your dog wont even think of them as a treat!

These cookies puff up at first…then flatten out
Bake @ 400 for 8 to 10 min.

FOR DOODLEBUGS:

While cookies are still warm, use a small cookie cutter and place in middle of cookie. Press gently and you have a little doodlebug.

*SIMPLY FRUGAL: SAVE the Snickerdoodle crusts for ice cream. Let ice cream soften a bit. Add the cookie crumbs and stir. ENJOY. These crumbs can be added to homemade ice cream, too...right before you put the finished ice cream into the freezer to harden.

*SIMPLY ADORABLE: Using scrap paper, use your scallop punch and make a top and a bottom. Place doodlebug in the middle. Wrap with ribbon. Perfect for Santa to take home to Mrs. Claus.

*These darlings are great sweet treats for holidays and for party favors as well!
I love adding baby bells for baby showers!!!

Leftover Buttercream?

Hope you are all having a great weekend! I realize we usually do not have leftover buttercream sitting around, but if you have a bit or a ton leftover OR if you want to make some...you could make buttercream sandwich cookies! I am always way too much and since I also had sugar cookies in my freezer, I decided to make up some cookies and keep them frozen! You never know when you may need a little last-minute gift for a friend!!

You could even use Graham Crackers, from s'more making...or these waffle sandwich cookies from Trader Joe's! Just some ideas for a sweet weekend!

Happy Saturday!!!

Celebration Cookie

Today is my Mother-in-Law's birthday. She is AMAZING, fun and YOUNG. Can you believe she was a Nana at 43! She is the BEST.

She married a wonderful man and raised two boys. She is incredibly strong and a giver. Through thick and thin, she has trusted God with her whole heart. She has lost a son and has fought cancer. I can tell you that she has been an incredible role model to me of what it means to have faith in Christ, no matter what the circumstances might be.

As mentioned before, in another post somewhere, I have been blessed to have her as a Nana to my children, I am thankful for how she raised her son {my hubby} and I am beyond grateful that she has been like a mom to me. From the very beginning, she has made me feel accepted, loved and like a part of her family.

Happy Birthday, Nana! WE LOVE YOU and are excited about celebrating YOU tonight!

Nana loves sugar cookies and she loves lemons...so, I baked sugar cookies using scalloped cookie cutters from DEMARLE.

The filling is a whipped buttercream with added powdered sugar for a thicker frosting...and a tad bit of Trader Joe's Lemon Curd for a bit of color and a zesty lemon taste.

I know it looks like a wedding cake...but it is a birthday cookie...we will just call it a celebration cookie, so nobody will know what it is for. How is that? Problem solved.

***BTW...theses make great bridal shower favors. Have a friend help. It takes very little time if you make a small assembly line! Making the cookies ahead of time and freezing them is perfect!

Monster Cookies

{They are so BIG that they need an extra big cookie bag!}

These cookies are about as close as we get to monsters in our home.

I am not sure if our children liked them because of their size or because of the name!

They are still a favorite!!

I like to keep all my scoops in one place...

Thank you Laur for the brand new SILPAT. I LOVE it!

Kabnet Wax between these cookies...since they can tend to stick together works really well. Simply put these cookies in a ZIPLOC bag and freeze until you need {WANT!} them.

Monster Cookies

6 eggs

2 cups brown sugar

1 ½ tsp. vanilla {I like 2 tsp. vanilla paste}

2 cups sugar

4 tsp. baking soda

2 sticks unsalted butter {room temp}

2 cups crunchy, salted peanut butter {16 oz. from Trader Joe’s}

10 cups oatmeal

1 cup semisweet chocolate chips

1 cup M&Ms

*Combine eggs, sugars, vanilla, baking soda, butter and peanut butter in stand mixer. using the paddle attachment, STIR until all ingredients are mixed. Then put all ingredients into a MONSTER BOWL. I mean the BIGGEST, HUGEST one you have.

*Add oatmeal, chocolate chips and M&Ms.

*Use an ice cream scoop to form balls of dough. Flatten. Bake on SILPAT or baking sheet at 350 for about 12 minutes.

*Let cool on Silpat for a few minutes. Remove and let finish cooling on wire cooling rack.

*My little monsters like it when I put in more M&M's like a whole EXTRA cup!

Enjoy and be sure to share...this recipe makes about a ton!

Molasses Cookies

Contrary to popular opinion, molasses cookies can be and should be enjoyed all year long...don't you think? I know they are kinda gingerbready, but we make them year-round. I love making them for summer picnics because they are a nice, sturdy cookie. Perfect for toting on bike rides, on hikes and to summer concerts. A few years ago, I started putting bread flour into my cookies. They are a bit more dense and chewier. I have no scientific proof of why...but you will have to try it and let me know what you think.

Do you enjoy molasses cookies all year...or are they only baked at Christmas?
