Landen's Peach Cobbler


Several years ago, I dropped in on my twinsie. As we sipped on tea and chatted, my nephew offered to make a peach cobbler for our family. I was so very excited. I don't know of many pre-teen boys that would offer to do something so sweet for their Auntie! Anyway, needless to say, it was THE BEST peach cobbler I had EVER had. No kidding. It was devoured by my family that night. So, I asked him if he would send me the recipe so that I could share it with you. I hope you enjoy it as much as our family enjoyed it!

PEACH COBBLER {IN A BAG}
Adapted from Betty Crocker


PEACH MIXTURE:

1/2 cup sugar
1 tbs. cornstarch {I used Clear Jel and skipped the cooking part}
one 29 oz. can of peaches {I used four cups of fresh peaches…about 6 large}
1/2 tsp. cinnamon
1/8 tsp. nutmeg
1 tsp. pure vanilla extract or pure almond extract

BREAD MIXTURE:

3 tbs. shortening
1 cup self-rising flour
1 tbs. sugar
1/2 cup 2% milk


Heat oven to 400'. mix 1/2 cup sugar, cinnamon, nutmeg, and the cornstarch in a 2-quart saucepan. stir in peaches and vanilla. cook stirring constantly, until mixture thickens and boils. boil and stir 1 minute. pour into ungreased 8x8 square pan; keep peach mixture hot in the oven.

Cut shortening into flour and 1 tablespoon sugar until mixture resembles fine crumbs. stir in milk. drop dough by six spoonfuls onto hot peach mixture.
bake 25-30 minutes or until topping is golden brown.

MY VARIATIONS:

When I pick peaches, I like to pick enough to enjoy a few cobblers throughout the year, so I put all of the peach mixture ingredients into a Ziploc bag and label it with what I need to add for the topping and baking instructions. All you have to do is to REMEMBER to get it out of the freezer and whip up the topping. Sprinkle with cinnamon and coarse sugar.

FAVORITE VARIATION: I HAD TO ADD THE 1/4 cup PEACH SCHNAPPS TO THE MIXTURE. NO WAY AROUND IT. It just puts it over the top!

SECOND FAVORITE VARIATION: Add 1/4 cup pure Orange Juice to Peach mixture. Seriously, just try it. You would not believe how it brings out the flavor of the peaches.

Now, every time I make a peach cobbler I remember the hospitality extended to our family through my nephew. It inspires me to want to share a freshly baked peach cobbler with someone I love!!  Another reason to teach your boys how to bake!!

Hospitality Is...Homemade Blueberry Lemon Scones





Okay girlies...here is your chance to make and take something really easy and yummy!

Our blueberries are ripening quickly now which is quite shocking due to the lack of something called "sunshine".  :}

HOSPITALITY:

Sometimes hospitality has nothing to do with having people into your home...I know not all of us are up to having people over and that is fine. There are times when I know God puts someone on my heart and I want to do something and I may just have a little bit of time to do something. There are also quite a few times when I would like to take a meal to somebody and the timing is not good.  Scones are something you can easily make up ahead of time and grab from the freezer. You can bake a few scones,  pack some milk or orange juice, and a jar of jam and take it to whomever for a light breakfast or for a pick-me-up during a move. It is also great to have on hand if you have guests who show up without a lot of time on your end to prepare. Just being ready and anticipating the unexpected will put you at ease this Summer and will make your company feel appreciated and planned for. It really is a treat for you to be able to pamper and a treat for the recipients of your good old fashioned genuine spirit of hospitality!

Blueberry Lemon Scones

Ingredients:

2 cups flour

5 TBSP. butter, cut into smaller pieces

¼ cup sugar

2 Tbsp. baking powder

1 tsp. baking soda

½ tsp. sea salt

1 Tbsp. soy flour {or 1 egg yolk}

1 cup full fat Daisy Sour Cream or plain yogurt

½ cup dried blueberries or chocolate chips, currants, dried cranberries or whatever floats your boat!

Zest of 1 small lemon {I use orange zest, too, for differnt flavored scones}

*heavy whipping cream and coarse sugar for tops of scones

Directions:

Whisk together dry ingredients.

Add butter and blend with pastry cutter or with flat beater in stand mixer.

Add wet ingredients together to flour mixture.

Add berries and zest.

Blend until ingredients come together.

Transfer to lightly floured surface.

Pat into a disc about the size of your hand spread out.



Cut into 8 triangles.



Place scones on SILPAT or parchment lined pan.

Brush with heavy cream and sprinkle with coarse sugar.



Bake at 4oo* for 12 to 14 minutes…or until golden.

Top with something very YUMMY!

If you want to make up several batches, you can pre-measure all your dry ingredients at one time and store individual batches in the freezer. This will save a ton of time.

Just mix up dry ingredients and follow directions from that point on when you decide to make the rest.





Blogger is not letting me comment, so I will answer a question on here. The yogurt and sour cream do not HAVE to be full fat, but I just think it tastes better. Reduced or lowfat is fine...fat free is NOT.OK. It truly is NOT. :) Plan on walking before beddie bye time...it is worth it in flavor and texture. :)

Hospitality... A Make and Take Meal






Showing hospitality by taking meals to people when they are sick, have had surgery or just need a little extra tlc when life gets overwhelming can be such a JOY! Sometimes it is easy to become so focused on our own families that it becomes difficult to think of others around us who are in need of our encouragement and help.

There have been PLENTY of times in my life when I have been taken under the wings of others and have been shown mercy. It is still a blessing thinking back to so many times others have cared for me and for my family. I can't help but to think of how it feels to be taken care of. It is one of the best feelings in the world!

When I think of hospitality, I think of the root word "hospital". So, I looked it up...just for fun. I know we are all familiar with what a hospital is, but my old 1963 edition of Webster's Collegiate Dictionary defines it as follows: "a charitable institution for the needy, aged, infirm, or young, an institution where the sick or injured are given medical or surgical care."

While we are most likely not giving medical or surgical care, taking a meal to someone is comforting beyond words and it is always appreciated and welcome. For those of you who may struggle having people in your homes, this is the perfect alternative for you!

If your palms are starting to sweat, hold on. Showing hospitality to others does not mean fancy schmancy. It does not have to be homemade and it certainly does not have to be a complete meal...unless you signed up for it. If you did commit and are feeling like it is more than you bargained for, ask a friend to help. Maybe you can split the meal.


What is the first thing you do after you commit to taking a dinner to someone? Do you start to stress and wish you would have never offered? Do you ask a friend to trade dates in hope that the recipient will no longer be in need when it rolls around to your turn? Anyway you look at it, it can be a daunting task, to not only need to fix your family dinner but somebody elses family as well!

I think my favorite binder is the "MEALS TO GO" binder. It has made taking meals to people so easy...and might I add...FUN! I am not even kidding! Taking the guess work out of what to prepare and take allows me to make quick decisions and spend a little extra time embellishing it. It is a great way to pamper people and I no longer feel like I am just doing crafts "to do" crafts, but it allows me to be a little creative while being able to share with those who are in need!




Here is what works for me, but I would love to hear what works for you. Others ideas are always welcome and appreciated!!! I think we all enjoy hearing how other people do things!

BINDER ORGANIZATION:

Label your binder

The first page has the list of meals I choose from...if your recepient loves something in particular that you are aware of it makes it even easier to decide!
Keep this list simple and doable. If it is a chicken from Costco, a loaf of bread, bag-o-salad and lemonade, write it down. If it is a box of cereal, milk and bread write it down. This has to be what works for YOU! If it is having a pizza delivered write the phone number down so that you can call and have it DELIVERED! Are we all on the same page? Onward we go!

Each Meal has a complete list of what I will be taking to make it a "meal".

I would encourage you to come up with one menu for each season...start with one meal that will be a JOY to make!




The next page has the recipes, so I am not spending all my time flippin' through different binders trying to track down what I need to make dinner.







Have you ever thought about taking breakfast the evening before? This is AWESOME. You can deliver it in the evening after your evening has "settled" down and it might be a very welcome change for one VERY happy recipient. You may want to try it!

While we have been talking about "meals to go", I wanted to make sure that I mentioned this: there are certainly seasons in life  where it is easier to help others and definitely seasons where it is not possible.  Showing hospitality is nurturing. It is showing you care. Simple as that.  It can look very different and can vary from person to person.

A few of my favorite things I have received as a "bedridden Momma" are: {1}a little bag with a card, a peppermint plant and a box of tea, {2}a bottle of sparkling water and a fresh lemon, {3}a bag of epsom salts etc. Even a sleeve of Saltine crackers and Sierra Mist is something you could keep on hand to deliver when the need arises!

Simple meals to go:

taco salad

pulled bbq beef or chicken

roasted chicken from the deli, a salad and bread

potato salad and chicken strips

pizza

pasta salad and crusty bread

tortilla soup and cornbread

So, as we have all been given the gift of TODAY, I hope that you, too, will find JOY in showing hospitality in a very real way wheather it be a meal, a note or a cup of lemonade!

Stork Bundles {Hot Basil Cheese Sandwiches}



We are all smack dab in the middle of summer and if you are like me...wishing the days were a bit longer to get everything done.

It is easy to find ourselves having no time to do special things for other people when we can't even get laundry done for our own family!

There have been so many weddings, memorial services and baby showers this summer that I can honestly not even keep up with them all, so I thought maybe you may be in the same boat!

OKAY, take a deep breath for just a second. GOOD JOB!
You all know we love taking dinners etc. but as mentioned many times before, it is not always do-able. So, here is a great alternative. How about taking lunch to the new momma? It can easily be taken while you are out on your errands...and although it has been years since I had babies...I remember how hard it was to scramble to make lunch for myself. It was usually devoured within seconds because there were things to do while babycakes was "napping" which in our case was always only about a 15 minute cat nap!

Anyhoo...your family dinner can be whipped up at the same time you are prepping lunch for your friend. Not only will you be ahead of the game for the day, but you will be so filled with joy that you were able to do something nice for somebody else! What a great lesson for your little ones to observe during the summer months! It is easy to just have fun during the summer with our children, but what a great opportunity to share with your children the value of caring for others.

NOTE: If you were unable to make it to the baby shower, you could include a wooden monogram from your local craft store for baby's nursery! Just tie a piece of fabric around the letter for a custom look. Children love picking out gifts and wrapping them. Just an idea!

HAPPY WEDNESDAY!

Stork Bundles {Hot Basil Sandwiches}

Ingredients:

1 small jar Kalamata olives, drained and sliced

2 cups tomatoes, diced

1 small red onion, chopped

1 ½ cups mozzarella cheese, shredded

1 cup Parmesan cheese

2 cloves of garlic, pressed

1-2 tsp. sea salt…taste it and see how much you want.

Pepper to taste

6 fresh basil leaves, thinly sliced

½ cup red wine vinegar

1/3 cup olive oil

{10 hard Sarah Lee Italian Sourdough Rolls}

Directions:

*Mix all ingredients together in a large bowl.

*Take each roll and cut out a large “plug” from the bottom.

*Remove extra bread

*Stuff 1/3 cup into each roll

*Replace “plug”

*Wrap each roll with foil.

*Bake @ 350* for 20 to 25 minutes

Wrap foil packages into white linen napkins…about 15”X15”...this will give it "the special delivery" stork look. You could use a burp cloth, too.

You are ready to deliver your little stork bundles! Aren't they so cute?
