OKAY. Finally. Our first evergreen tomato is ready to be picked! I almost feel like we should have a tomato "celebration"! Kinda like Thanksgiving in August! Not sure it has been worth all of the waiting and babying of
THE tomato plant...but I am not complaining because it is going to be worth every bite! The question was this. What was going to be the very first thing to make with the very first tomato? Tacos? Tomato Pie? BLT'S minus the bacon? Pasta Caprese? You have no idea how I have fretted! Not really, but it just sounded good! :}
We are making one of our favorite summer sandwiches and it is going to be AMAZING with our little home grown tomato...yep.yep.yep!
Ingredients:
Sourdough bread...the best you can get!
Pesto mixed with a bit of mayonnaise
Provolone cheese slices
Thinly sliced tomato with a bit of salt sprinkled on top
Thinly sliced cucumbers
Thinly sliced red onion
Mustard
Thinly sliced lettuce
Directions:
*Take two slices of bread and lay them out on a cutting board
*Put mayonnaise and mustard on one slice
*Put pesto mayonnaise on the other slice
*Place cheese on one slice of bread and the veggies on the other slice
*Place both slices together to make a sandwich
.
*Cut sandwich in half...it is the polite way to eat a sandwich, you know...
Serve with dill pickles and KETTLE CHIPS and a BLACKBERRY MILKSHAKE with a big, thick straw.

That sounds good but ours is always a plain old tomato sandwich on white with full fat mayo, salt and pepper. Yummy.

ReplyDeleteOh you are so lucky! We didn't have one single tomato plant, out of 17, make it because of two months of extreme triple digit heat. So sad, my favorite thing about summer is garden tomatoes. My absolute favorite way to enjoy one is a BLT! Your sandwich sounds so good, Lisa! :)

ReplyDeleteOf course, living in the south it is always a race among the older generation farmers to have the first ripe tomato by July 4. We planted our garden a little late this year and probably had our first tomato the next week. My husband is very impatient and will usually pick two or three green tomatoes for fried green tomatoes (another southern delicacy - olive oil, green tomatoes, egg wash, organic corn meal...yum!). This always just starts the season and makes that first red tomato even tastier though sometimes I have to encourage him to leave the green tomatoes on the vine so we can have some ripe tomatoes! Still enjoying your blog!
