Vegan Green Bean Casserole


The GREEN BEAN CASSEROLE is not to be forgotten, not to be overlooked, not to be changed in any way, shape or form...but for those with dairy allergies or for those who are trying to be a bit more mindful of a nasty little thing like chemicals added to food, {AHEM!} Here is a great alternative! Not to worry little miss Lauriss and Caleb, there will be one whole pan of THE ORIGINAl for you and your friends...with added cheese, of course.


Vegan Green Bean Casserole
adapted from the back of TRADER JOE'S French Fried Onion Pieces

Ingredients:

6 Tbsp. olive oil

1 medium yellow onion, chopped

1 pound baby portabella mushrooms, sliced

2 tsp. kosher salt

1/2 tsp. freshly ground pepper...yes, it is worth it, my dear!

2 14.5 oz. cans of French Green Beans, drained

6 Tbsp. flour

2 cups unsweetened soy milk

1 cup TRADER JOE'S GOURMET FRIED ONION PIECES {want the ingredients list? Onions, oil, wheat flour and salt...not too shabby!}

Directions:

*In a large skillet over medium heat, add oil and onion and sautee until onions start to soften. Add mushrooms and cook for about 8 minutes. Season with 1 tsp. salt and 1/4 tsp. pepper. Set aside.

*Heat 4 Tbsp. oil in skillet over low heat. Add flour and whisk for about two minutes. Add soy milk and continue to whisk until mixture starts to thicken...about 3 minutes. Add 1 tsp. salt and 1/4 tsp. pepper. Remove from heat and add to onion mix. Pour over green beans, and toss to combine.

*Grease a 9" x 13" pan and add mixture

Bake covered at 350* for 25 minutes. Top with fried onions and bake uncovered until crispy and golden.

Frosted Animal Crackers {custom colors}



Baby shower season is HERE! Can I tell you how many people we know right now who are expecting? Too many to count!

I think animal crackers make a perfect party favor, but who wants to serve pink and white cookies when your shower colors are yellow, blue or green? What about purple, orange or red? {I know they have seasonal animal crackers with different colors, but if you are like me and thinking six months ahead of time is impossible!}

Aside from color choices, I am not always thrilled with the ingredients...so here is what I came up with...make them yourself in whatever color or shade you would like. Mix and Match and have fun. The possibilities are endless.

Ingredients:

Organic animal crackers {Trader Joe's}

Candy melts or white chocolate...if you don't mind a bit lumpy and thick

Food coloring in whatever color your little heart desires!

SPRINKLES

Directions:

*Lay the lil critters on a cooling rack...top side up.




*Melt candy in microwave in small increments...as not to scorch it.

*Add food coloring and stir.

*Dip each animal cookie {top side down} into melted candy.

*Sprinkle with sprinkles...and freeze for quick set-up!

Easter Carrot Cake {mini}





Carrot Cake {with pumpkin}
Adapted from the Joy of Baking


Preheat oven to 350*
Prepare two round cake pans

Whisk together:

2 cups flour

1 tsp. baking soda

1 ½ tsp baking powder

1 ½ tsp. ground cinnamon


Beat together in stand mixer:

4 eggs

1 ½ cups organic sugar

2 tsp. pure vanilla extract

1 cup Libby’s plain pumpkin

¼ cup applesauce {I use Trader Joe’s Gravenstein without sugar}


Add dry ingredients to wet ingredients. Fold in 2 ¼ cups finely grated carrot.

Divide equally between the two cake pans. Bake for about 25 minutes or until toothpick inserted in the middle comes out clean.

*Remove from oven and let sit on wire rack for about 10 minutes. Invert on to wire rack. Let cool completely.


*Stack cakes on cake plate, frost and garnish with coconut and DIG IN!




I think ruffles are so feminine...this cake reminds me of the ruffled pants we would put over Rissy's tights...she just looked like a little bunny hopping {okay, crawling} around the floor with ruffles for her cotton ball tail! Here is to sweet baby girls with diapers and ruffles!! I'll have to think of something sweet for little boys...maybe a camo cake with bunnies and sling shots?

Gyro Roasted Chicken


Since I have had enough requests for MEAT lately, I thought I would post the easiest recipe for roasted chicken with a twist.

This will probably be the only time I will have a picture of raw meat on this blog, too! :}




My son has convinced me that roasted chicken is the way to go. It is easy and one little baak baak chicken can go a LONG way...maybe toooooo long if you ask me.

If you have a hectic day on the agenda, this will take a bit of planning for {soaking the chicken in kosher salt overnight}, but other than that, the smells of your home come dinner time is sure to evoke that of an old-fashioned dinner packed with nutrition and minimal prep!


Gyro Roasted Chicken

Ingredients:

1 whole free-range, organic chicken 4-6 lbs.{also available at TRADER JOE'S...more expensive but worth it!}OR 4 large skinless, boneless chicken breasts.

4 cloves of garlic

2 Tbsp. olive oil

1/2 cup plain yogurt

2 Tbsp. oregano

a few sprigs of thyme...I use ALOT

salt and pepper

1 lemon, sliced

Directions:

*Soak chicken in kosher salt overnight.

*Rinse thoroughly with cold water.

*Pat dry with paper towels.

*Place garlic, oil, yogurt, and oregano into blender and blend away!

*Place chicken in roasting pan with the breast side up.

*Stuff thyme between skin and breast.

*Sprinkle with sea salt and freshly ground pepper and place lemon slices on top and in the cavity.

Place in preheated 425* oven for 20 minutes. Reduce the heat to 350* and bake for about 1 1/2 hrs. Chicken is done when thermometer reads 170-180* {test near hip joint near thigh}. Cover and let sit at least 10 minutes. {thank you to my hubby and Caleb for teaching me this!}

It sounds a bit complicated, but once you do it once, it will take minutes to do! PROMISE! If I can roast a chicken without burning the house down...anybody can do it.

ANYWHO, this is how our dinner will be prepped for tonight:

Chicken is marinating in the roaster pan for the day...did that this am.

Before company arrives, the table will be set, the GREEK SALAD with balsamic vinaigrette will be made...and the TZATZIKI sauce will be made also. If you don't wanna make the sauces or dressings, TRADER JOE'S has really good ones, but I have a cucumber that needs to be used and I have the rest of the ingredients, too...so I will just make them.




Flatbread is also available from TRADER JOE's...so that is it. Just serve the chicken on a platter and let everybody make their own Greek sandwiches, a Greek salad OR a Greek "taco" bar. EASY PEASY for a company's comin' for dinner kinda day!

Anzac Granola Bites




Anzac biscuits are among my very, very, very favorite "cookies" and homemade granola is another favorite...so, I thought I would make homemade granola bars and have the best of both worlds.

These are NOT low-calorie by any means, but they are jam packed with nutritious ingredients and perfect for your children {or the momma who hasn't had time for breakfast!} to grab and go on their way to school. Perfect for for school or after track and before dinner. These bites are dense and alot more filling than the ones that are store-bought...so you may want to keep that in mind when you are cutting them into shapes.

I have no idea how many recipes I have tried. I finally decided to take what I loved from some and eliminated what I didn't like and I think these fit the bill for our family. Agave syrup is a great alternative to cane syrup...but I was in keeping with my "ANZAC" cookie recipe...so, cane syrup haaaaad to be used.

{I was going to post this on Anzac Day which is April 25th...but this way YOU can make them for ANZAC day!}




Anzac Granola Bites

Lisa Pearson

2 ½ cups rolled oats

1 1/2cups coconut

1 1/4 cups suflower seeds

1 tsp. cinnamon

1 tsp. pure almond extract or vanilla if you prefer

2/3 cup Lyle's Golden Cane Syrup

1 cup almond butter


Directions:

*Place oats, coconut, sunflower seeds and cinnamon in a large bowl.



*Stir thoroughly.

*Add extract, cane syrup and almond butter

*Use your strong hands and make sure the ingredients are thoroughly mixed together.

Grease an 8x8 pan {or a 9x13 for thinner bites} and press granola mixture into pan. Use fork tines to press and evenly distribute mixture.




Bake at 350 for 25-30 minutes. Chill and cut into desired shapes.

Enjoy!

PS.I think I will be using these for party favors...soon!

baby shower menu...and SENTIMENT CAKES







"A sentiment cake is a cake I make for sentimental purposes. It is where
I make cupcakes to be enjoyed by the friends who come to the party and
the sentiment cake is boxed up to be enjoyed by the family members not
invited to the party… Maybe a hubby or younger siblings. They LOVE
it! That way not too much cake is consumed or wasted! But it helps to
carry the theme. What is a party without the cake.”



The menu for the baby shower included:

Pea Pod Baby Shower Menu


Lime Punch

Cheese and Assorted Gourmet Crackers

Sweet Snap Peas

Croissants

Pitas

Curry Chicken Salad

Almond Chicken Salad

Vanilla Cupcakes with Whipped Buttercream

Coffe and Tea


“Sweet Pea” Pecan Tassies

3 eggs

1 cup dark corn syrup

2/3 cup sugar

1/3 cup unsalted butter, melted

¼ tsp. sea salt

1 tsp. pure vanilla extract

1 ¼ cups pecan halves

1 15 oz. package refrigerated piecrust dough or homemade

Place Demarle Boat Tray on Perforated Baking Sheet.

Roll dough out on Roulpat. Use boat dough cutter to cut out little “pods”. Line tray with pastry. Use shaper to press dough into tray. In a mixing bowl beat eggs. Add corn syrup, sugar, butter, vanilla and pecans. Mix well.

Pour filling into prepared “pods”.

Bake @ 350 for 30 minutes or until golden.



Lime Punch

1 carton Lime Sherbet

4 litres 7 UP

Add ingredients to One

Glass Crock – availabe at Target and Costco



Lisa’s Almond Chicken Salad

6 boiled chicken breasts, chopped

1 tsp. garlic salt

1 ¼ cups Best Foods Mayonnaise

1 cup toasted almonds, chopped

1 cup Monterey Jack Cheese

Mix all ingredients together, except for almonds.

May be refrigerated overnight.

Add almonds before serving.

May add more mayo if needed.





Lisa’s Curry Chicken Salad

6 cups chicken, chopped

2 8oz. cans water chestnuts, chopped

1 ¼ cups Best Foods Mayonnaise

1 tsp. salt

2 tsp. curry

Mix all ingredients together except water chestnuts.

May be refrigerated overnight.

Add water chestnuts before serving.

Note: If I am boiling chicken breasts, I figure on one chicken breast per cup.

May add a bit more mayo before serving if needed.
