Kim's Sandwich Bread


HI! Now we all know that yeast breads are in a league of their very own. It can be really intimidating, BUT, I assure you, this is a simple recipe with simple ingredients that you will be able to do. It may take a few trys...however...you will agree that it is worth it!

Last week Kim and her "little bird" joined me for lunch. Kim brought the bread, KETTLE chips and fizzy drink {my favorite!}. So, basically, I provided the peanut butter, jam and dishes! :} Anyhoo...the bread was PERFECT! Some homemade breads are great the first day and kinda dry and crumbly for sandwiches. Not this one...not by a LONG SHOT. It was a day old and just right for sandwiches. I am so happy I agreed to her bringing lunch. Thank You, Kim!

When is the last time you enjoyed lunch with a friend? I love it! Nothing fancy schmancy, but oh.so.fun.

P.S. I offered to make tacos, I don't think she realized I was offering my leftovers from the night before?

Kim's Sandwich Bread

Artisan Bread in Five Minutes a Day

1 1/2 Tbsp. yeast

1 1/2 Tbsp. Kosher salt

3 cups lukewarm water

6 1/2 cups white flour

Mix all ingredients together until flour is incorporated. Dough will be wet.

Cover and let raise for 2 hours.

Grease and flour two large loaf pans.

Divide dough evenly between the two pans.

Let rise for another 40 minutes.

Bake @375* for 25 minutes or until golden brown.

That's it!

You will have one loaf to enjoy and one loaf to share!

Tostada Tartlettes {mini pies}


Does anybody know the difference between pies and tartlettes? I could have looked it up, but ignorance is BLISS!

Taco pie simply does NOT sound near as tantalizing as tostada tartlettes. What do you think?

I forgot about these tempting little treats until a wedding reception this weekend. How yummy and fun to make. Aside from the fact of how cute they are, they are super dee duper easy.

Ingredients:

Pie dough tartlettes made or store bought {I used Trader Joe's pie dough and cookie cutters and a tart tray}

Refried black beans...{I whip mine}

Finely shredded Romaine lettuce, and I do mean as fine as possible...so prissy looking

Shredded Tillamook Cheddar Cheese

Trader Joe's Corn and Chile Salsa {Goodness Gracious! Don't skimp on this}

Directions:

Place beans in bottom of prepared and ready-to-eat tartlettes.

Layer the rest of the ingredients into "pie shell"

Serve at room temp. Be kind and share.

Spicy Spinach Salad



WOW! Where oh where has February gone? Are you feeling ready for Spring, yet? I am! Today was spent looking for bathroom lights since plan A did not work. Come to find out, plan B is not going to work either. So, after dinner we sat down with the best in laws...ever...and came up with plan "C". Our third plan should be a charm, right? If not, we will be resorting to good old fashioned lighting. Yep, I am talking CANDLES. And by the way, I have no idea who came up with brilliant idea of vanities and running water, but a bowl and a large pitcher of water sounded really good this afternoon after having to buy new sinks...{don't ask!}

All this to say, I was happy I planned a simple dinner!

Menu:

Fizzy drinks

Spicy Spinach Salad

Grilled bread

Rotisserie chicken

Blueberry/Pom Sherbet



Salad ingredients:

Spinach

Red onion rounds

Baby tomatoes

Feta cheese

Kalamata olives

Peperoncini peppers


Balsamic Vinaigrette

Happy Mundane Monday! Mine was NOT mundane today...maybe I should have stayed home to do laundry? NAH...would have missed out on all the fun with my hubby!

Paper Cake Stand


Hope everybody has had a great weekend! Maybe some of you are fortunate enough to have Monday off, too!

I promise I will give the sweets a break and I will be done with pink and cake stands for a bit {hopefully!} :}

Anyhoo, I just wanted to give you one last easy peasy idea for a quick, inexpensive cake stand.

This is all you will need:

1 paper plate

1 paper or styrofoam cup {Kim suggested wrapping the cup with scrapbook paper}

glue stick

Just glue the bottom of the cup to the bottom of the plate and VOILA...you have a fun cake stand to give away with cupcakes, pies, muffins or anything else that deserves to be on a pedestal...like BUTTERMILK or Old-Fashioned Donuts! Or a mini birthday cake!

Mini Crepes and Whipped Cream


This would be a fun dessert, don't you think?

All you need to do is make up your crepes using a favorite recipe.

Use a scalloped cookie cutter {available at Sur la Table} and cut out rounds.

Dice {teeny tiny} fresh strawberries and coat with a bit 'o sugar and lemon juice.

Fill crepes with berries.

Serve crepes with a small dish of whipped cream.

Don't forget to sprinkle powdered sugar on top of rolled crepes before serving. It's like a dusting of snow!! Speaking of...we had a dusting of beautiful snow this morning!

That's What Moms are For...



Okay. If you are reading this and you have grown children, guess what? WE STILL NEED YOU! We really, really do.

Just because our children are not in need of babysitters anymore and we are not in need of "date nights", we still love the nurturing you have to offer.

We love the phone calls, the help with sewing projects, the homemade rolls and brownies, the handwritten notes, the flowers from your yard, the garden cilantro, green onions and berries.

We need the tlc and the advice only momma's can get away with. We need the time you offer us to stop and enjoy a cup of tea or picnic together. We need the foot rubs, your leftovers before you leave town and the hand-me-downs. Your expert help with our parties we plan, your encouraging voice, and the reminder that "things will get better". We need the Bible verses you write out for us that have been of comfort to you in difficult times. The hours you lie awake interceeding on the behalf of your children and grandchildren...the recipes you clip for us to "try"...our college sheets you have saved for years and years because you don't have the heart to send them to goodwill...and the faded little notes we scribbled to you that are still on display throughout your home...

We NEED YOU to remind us how quickly life goes by and HOW swwet and precious every moment is that we have to spend together...even if we still disagree on the length of skirts and carrot sticks.

Thank you for the dinners when you are just as busy as we are. Thank you for still taking us under your wing and for loving us with such amazing love! That's what moms are for!

A Valentine Lunch



Happy Valentine's Day! I love Valentine's Day so much. I know every day should be Valentine's Day...and it IS...but it is fun to have one day set apart to have a little bit of extra fun.

I still get Valentine's from my Momma and I will never grow out of loving them.

Tonight, she is bringing homemade chili to us. YUMMY. We will have it for dinner tomorrow, though...since the menu is already in place for tonight. BUT, since the bathroom is still a mess and it seems the house is cluttered with tools, it will be so nice to have a homemade dinner two nights in a row! :)

What do you enjoy most about Valentine's Day? Do you have a tradition?

Well, this is short and sweet and to the point, since my hubby will be back from Home Depot soon.

It isn't every Valentine's Day that he is home, but he is this year and I am A VERY HAPPY WIFE!

A PB & J sandwich drenched with homemade jam

Cold APPLE SLICES...leave room for a YUMMY.YUMMY.DINNER, RIGHT? Don't forget to cut the sandwiches out with a heart-shaped cookie cutter!
