German Apple Pancakes {mini}




Happy Monday! What a bee.u.tee.fullll weekend we had here in Portland. The sun was out yesterday and the leaves were stunning in their Autumn wardrobe!

While we have been enjoying soups, chili, and warm dinners...breakfast for dinner is always a welcome change.

Do you enjoy breakfast for dinner on a regular basis or is it something really rare and special?

It is always tempting for me to skip the apples and settle for Dutch babies, but German apple pancakes when their is a chill outside just makes your home smell THAT.MUCH.cozier...not to mention a sensory change from onions, garlic and leeks!

If your blender is in the very very back of your kitchen cabinet, you will want to dig it out. You will need it for the batter if you want to avoid the lumps and bumps! Enjoy!


German Apple Pancakes

Preheat oven to 450*

Prepare 6 jumbo cup muffin tins by greasing

2 Granny Smith apples

1/4 cup brown sugar

1 Tbsp. lemon juice

1/2 tsp. cinnamon

2 Tbsp. butter, melted


*Toss apples with sugar, lemon juice and cinnamon. Add apples to smal skillet with melted butter and sautee for about 10-12 minutes until soft. Let cool for a few minutes.



*Divide apples between 6 jumbo muffin wells.


Pancake Batter

2/3 cup flour

1/2 tsp. salt

1/4 cup sugar

2 Tbsp. butter, melted

3 eggs

*Place batter ingredients anto blender and blend away until blended and frothy.






*Turn oven to 400*

*Pour about 1/3 cup batter onto apples




*Bake for about 15 minutes until a bit puffy and golden

Serve with warm syrup and cool whipped cream!

  10. Kathy...thank you! Ohhhh did they ever smell good. Our home still smelled like apples and cinnamon this morning! I never did get your message about the snickerdoodles.
