Okay ladies...I am back from our 20th anniversary festivities. I am completely overwhelmed by how much fun this past week has been! We went back to THE.LAKE today and had so much fun. I just don't want this summer to end! How about you?
Anyway, this salsa is so easy and can be made up ahead of time. It is our family's favorite! The longer it sits, the better it tastes. This is what I made to share at the lake today. If you are making it for teenagers, you had better plan on doubling your recipe...that is if you want some, too!
My twinsie always makes it and there are never leftovers! I am pretty sure you could get some good bartering deals out of it! I know I have!

Auntie Laura’s Jack Cheese Salsa
1 lb. Tillamook Jack Cheese, shredded
2 medium tomatoes, chopped
1 bunch of cilantro, soaked, drained,dried and chopped
1 bunch green onions, chopped...I cut off about half of the green ends
1 {6oz.} can olives, sliced
1 {4oz.} can green chilies, the diced ones
1 garlic clove, minced
1 jalapeno pepper, diced... you may want to remove membrane and seeds
¼ cup red onion, chopped
1 cup Italian dressing, {I use homemade or Trader Joes}
Mix all ingredients together and pour dressing on top. Mix and chill before serving.
Serve with blue corn tortilla chips.
You may want to add more dressing before serving if you want it more moist.
Sometimes I double the batch and use the leftovers to top tortillas with black beans. Instant dinner! Just serve pineapple chunks or watermelon on the side and lemonade to drink! YUMMY!
other addition ideas: a bit of chipotle peppers, rinsed and drained black beans, avocado.
