Raspberry Orange Garden Salad
What a beautiful weekend we enjoyed here in the Northwest! We are loving summer and all the berries.
It is so nice eating dinner outside in the evenings...and it is going to be a shock when we actually have to eat inside at the BIG table again! But for now we are LOVING the beauty of the backyard!
Tonight's Menu:
Lemonade
Raspberry Orange Garden Salad
Fresh Watermelon Slices
Salmon Burgers with Special Sauce
Fried Potaoes
Orange Raspberry Garden Salad
1 bunch fresh spinach, cut with scissors...for dainty bite-sized pieces!
1 head Romaine, chopped
1 small can Mandarin oranges, drained
1/2 cup sliced almonds
Toss above ingredients together and add the dressing right before you are ready to serve dinner.
{Dressing}
1/3 cup olive oil
1/3 cup orange juice
1/4 cup red wine vinegar...plus a bit more if you like
1 Tbsp. sugar
1/2 tsp. kosher salt
6 grinds of fresh pepper...to taste
1 large clove garlic, peeled and crushed
Shake the above in a half pint canning jar.
Now...toss your fresh garden greens, fire up the grill and enjoy a sweet evening outside!

ReplyDeleteI make something similar and here we can get Olive Oil that is infused with the raspberry..it is marvelous..and so is the pear vinegar one. Love this recipe- Happy Summer to you- xo Diana
