Kim's Sandwich Bread
HI! Now we all know that yeast breads are in a league of their very own. It can be really intimidating, BUT, I assure you, this is a simple recipe with simple ingredients that you will be able to do. It may take a few trys...however...you will agree that it is worth it!
Last week Kim and her "little bird" joined me for lunch. Kim brought the bread, KETTLE chips and fizzy drink {my favorite!}. So, basically, I provided the peanut butter, jam and dishes! :} Anyhoo...the bread was PERFECT! Some homemade breads are great the first day and kinda dry and crumbly for sandwiches. Not this one...not by a LONG SHOT. It was a day old and just right for sandwiches. I am so happy I agreed to her bringing lunch. Thank You, Kim!
When is the last time you enjoyed lunch with a friend? I love it! Nothing fancy schmancy, but oh.so.fun.
P.S. I offered to make tacos, I don't think she realized I was offering my leftovers from the night before?

Kim's Sandwich Bread
Artisan Bread in Five Minutes a Day
1 1/2 Tbsp. yeast
1 1/2 Tbsp. Kosher salt
3 cups lukewarm water
6 1/2 cups white flour
Mix all ingredients together until flour is incorporated. Dough will be wet.
Cover and let raise for 2 hours.
Grease and flour two large loaf pans.
Divide dough evenly between the two pans.
Let rise for another 40 minutes.
Bake @375* for 25 minutes or until golden brown.
That's it!
You will have one loaf to enjoy and one loaf to share!

That sounds like great bread. Being just two of us we have to limit the bread in the house, if you know what I mean. Looks yummy.
