Snickerdoodle Ice Cream
Sliders
Mix together:
1
cup butter, room temp
1 cup sugar
2
eggs
Stir
together:
2 3/4
cups flour
1
tsp. cream of tartar
1
tsp. baking soda
¼
tsp. sea salt
Directions:
*Roll
into balls the size of golf balls.
*Roll
in mixture of 2 Tbsp. sugar and 2 tsp. cinnamon.
*Place
2 inches apart on ungreased baking sheet.
*Bake
until lightly browned…but still soft.
*These
cookies puff up at first…then flatten out!!!
Bake
@ 400* for 10 to 12 minutes.
Once your cookies are COOLED, scoop balls of ice cream and sprinkle with extra cinnamon sugar.
Place scoops of ice cream between cookies. Serve or prepare and freeze for later...that is, if you can WAIT! :}

Have you frozen them assembled before? I'm thinking it would be fun to keep a few ready made in the freezer if you think they would freeze well.
