BABY SHOWER CURRY CHICKEN SALAD

Spring is HERE and that means outdoor party planning, picnics, bridal showers, luncheons and baby showers are being planned.

It is a good idea to have a few go-to recipes that will not disappoint and that are easily prepared in advance. We all know the "day of" is filled with enough last-minute challenges as is.

Although there are quite a few "curry haters" out there, this is a chicken salad even they will love and picky children will not {hopefully!} complain.

Curry Chicken Salad

Ingredients:

6 cups cooked chicken, chopped

2 8oz. cans water chestnuts, drained and chopped

1 ¼ cups Best Foods Mayonnaise

1 tsp. sea salt

2 tsp. curry or to taste



Directions:

*Mix all ingredients together except water chestnuts.

*May be refrigerated overnight.

*Add water chestnuts before serving.

*Note: If I am boiling chicken breasts, I figure on one chicken breast per cup.

*You may want to add a bit more mayo before serving if needed.

Swim Meet Cupcakes



What is an Auntie to do when it is time to celebrate a swim meet for a sweet little niece?

She bakes cupcakes...because all little girls LOVE cupcakes. She goes through her paper scraps and makes girly flag cupcake toppers and makes vegan cream cheese frosting...because all little girls taste the frosting and lick their fingers first.

Zesty Strawberry Shortcake {to go}




When the birdies start chirpin' early in the morning and the sunbeams bounce off your warm bed blankets, you know SPRING is in the air which means picnic season is on its way! Although we enjoy picnics all year long {making picnic fare and eating at games, in the car etc.} warmer temps mean hikes, bike rides, adventure in the warm fresh air! What do you look forward to when the sun starts to shine and mornings start to become a tad bit warmer?

Here is a quick recipe that beats the storebought variety. It will take you less time to make these yummies than it will take you to take a trip to your local grocery store! The smell of the orange zest baking in these biscuits will entice your children to be members of "the clean plate club"!...with the promise of a healthy dessert to follow!



Zesty Strawberry Shortcake

INGREDIENTS:
2 cups flour

2 Tbsp. organic sugar

1 Tbsp. baking powder

1 tsp. sea salt

Zest of 1 orange

1/3 cup unsalted butter, softened OR Organic All Vegetable Shortening {Spectrum brand}

1 cup whipping cream...sweetened a bit OR Vanilla Soymilk

Extra cream or soymilk
Coarse sugar

DIRECTIONS:
• Mix dry ingredients together; Cut in butter; Add cream. Mix until dough is soft
and ingredients are all mixed in. It will look like cookie dough.

• Place six to eight mounds on greased baking sheet or SILPAT. Flatten just a bit.

• Brush tops with cream and sprinkle with coarse sugar.

• Bake at 425 for 7-10 minutes or until golden brown.

Note: Let cool and wrap each shortcake in cellophane bag. Tie with string.

BERRIES:
*Slice four pints of fresh strawberries, add about half cup of sugar

*Sprinkle with a little lemon juice;

*Refrigerate until ready to serve.

*Slice shortcake in half, add strawberries, top with ice cream.

If you want to make these in advance, just bag the individual wrapped shortcakes, put into gallon Ziploc bag and freeze. They will stay as fresh as the day you baked them!

...OR...you can make lots and lots and lots and have friends over and enjoy it outside!

Wings of the Dawn


Do you ever have mornings where you wake up full of joy, full of energy, and ready to get the day started...and within seconds your joy seems to escape like a baloon being deflated? Where your energy actually leaves your body feeling weak and limp? It can be a phone call, a letter, a friend at your door, a text or ???

What about sleepless nights spent in prayer only to find out things are actually worse in the morning? Doubt and discouragement can creep in and take hold,and it is easy to feel like God is nowhere to be found, but it is during these times that we can certainly look to God Almighty for comfort.

A few years ago our children went on a missions trip and fell in love with a very special missionary family. Not long after they arrived home, the momma was diagnosed with a brain tumor. It has been heart-wrenching. No other words really can describe it. It hardly seems fair that such an amazing, God-fearing momma would be taken from her family and minisrty. Our family prayed specifically that she would live to see her birthday...and she did. God blessed her with many more days here on earth than what the doctors thought possible, but this dear, sweet momma died this past month. Truly heaven's gain.

This morning her daughter was missing her. Her daddy asked her what made her think of her today. She had made her momma a bracelet and had forgotten to give it to her and she didn't know what to do. What is a daddy to do? I am still sobbing as I type! I can not think of any words to comfort a broken little heart. Not enough love and care in the world can replace a momma.

Please pray for this little one who needs to know that her Jesus can and will meet her pain with HIS grace AND THAT SHE WILL FEEL HIS HAND HOLDING HER TIGHT.

How good to know that we can depend on Him because...

"If I rise on the wings of the dawn,

if I settle on the far side of the sea,

even there Your hand will hold me fast.

If I say, 'Surely the darkness will hide me

and the light become night around me.'

even the darkness will not be dark to YOU."

DIY Spice Labels with Packaging Tape




Hope you all had a great weekend. Ours was great! My dad and mom spent Friday night which was SO.MUCH.FUN! The roles have been a bit reversed. I could not wait for them to arrive. Caleb had a friend over and my hubby was at work, so it was a very fun thing to have them spend the night. We had popcorn and hot tea and then I got to kiss them goodnight and tuck them in...but before that, my mom said, "Lisa, come sit down and talk." As if we hadn't already talked enough. It is still music to my ears to hear the soothing voice of a Momma! So, there we sat, them in bed and me sprawled across the bottom of the bed. Although roles have shifted a bit, they will ALWAYS be my parents and I will ALWAYS take full advantage of the little pockets of times we can enjoy together. For those of you who know my Momma and know she never arrives empty handed, this is what she brought: Cereal for breakfast {doesn't want to "inconvenience me"}, hard-boiled eggs {Caleb made a sandwich for dinner last night with them}, sour cream {because she only needed a little bit and would not use up the whole container} and artichoke tapenade that is to-die-for! :} oops, I almost forgot...freshly baked rolls, too!

I love overnight guests! What about you?

Okay, on to the spice jar labels. A girl can only take so many labels from a label maker! What to do? You DIY! I don't know why DIY sounds so snooty to me, but I guess that is what it is called. Maybe it reminds me of my babies deciding they didn't need my help because they wanted to "do it myself" {yes, this is what they would say word for word!} as they would grab the crayon, spoon or washcloth!

I could not figure out how to make waterproof labels that were cute, so I started experimenting. Contact paper was too thick and "cloudy", sticker paper was not waterproof, so I looked at my label maker and decided that the top of the label looked like packaging tape, and guess what? It was PERFECT...and FREE!




My spices have been driving me batty! More like insane. I took every single one out of the cabinet and washed them out. I put them into the oven to make sure they were nice and dry before refilling them. This was awesome because there were quite a few spices I simply never use, so I was able to condense the mess. My sis is getting a whole bag of extra spices and bottles for her camper...so there is no waste!




I took sections of spices and made up labels on my laptop as I worked on the project.
It didn't take that long and I am really excited about the simplicity of all of the spices having their very own old-fashioned labels!

Punches are spendy and do not fit into a tight budget, {unless you use your JoANNS/Michaels 40% or 50% coupons} but most of us know someone who has a paper punch that would be more than willing to lend it out.

How to Make Labels with Packing Tape:

1. Using your computer, type up the words you would like on your label. Make sure it is the right size font and that it will fit in the space allotted. I punched out the label I would be using and held it up to the computer screen to make sure it would fit. I am sure there is some mathematical way of figuring this out, but I wanted the project to get done in my lifetime!

2. Once you have your page filled with what you will be punching out, print it out. I printed mine on regular, old printer paper because it needed to be lightweight to wrap around the jars. {Eventually, I will find some striped or polka dotted paper...but for now, white is just fine and dandy and it was what I had}. Card stock would be great to use to mark children's toy bins etc, because it is almost indestructible! Using your punch, punch them out. Be sure to flip the punch over so that you can see the writing and "eyeball" it for centering.




3. Place writing on to sticky side of tape. Cut out leaving a bit of sticky tape exposed on the outside of the label so that you can affix it to your spice jar.





*I buy most spices in bulk to keep them fresh and to avoid waste.

*A spice you rarely use could be placed in an extra spice jar with the bulk tie thingy twisted around the neck of the spice jar.

Macaroons on a Straw




These wer fun to make. Really fun! Bake your favorite macaroons. Let them cool just a bit. Insert a straw and cover with a cellophane bag. Tie a bow and make a tag. I think a little spring bouquet would be cute for May Day? What do you think?

I am not sure if I love spring because of the chirping little birds and signs of new life...or if it is just a great excuse to get out all the pretty pastels...especially the PINK! Personal new favorite: PINK AND WHITE PAPER STRAWS...with stripes and polka dots. Do you have a favorite spring color?

Show-n-Tell {March}






Where oh where has the month of March gone? Oh where oh where can she be? GONE! I never really seem to realize how fast time goes by until certain things are back on the calendar. When you have once-a-month happenings it always dawns on me that "it's already been a month?" moment.

Yesterday was our SHOW-N-TELL. We chose Noodles and Company. Linda got off early from work, so we met up a bit before Julia {my term of endearment for her!} arrived from her food cart, THE NATIVE BOWL. There is never a dull moment. If you remember, last month's meeting was at YUMM CAFE. Anyhoo, we all had the assignment to experiment making the sauce. After a couple of tries, I justified buying the sauce because I LOVE the container it comes in, so that is a buck off the cost to buy the same one at THE CONTAINER STORE right off the bat! Then, the time to make it and quite possibly need to toss it and money to buy the ingredients. I decided it is worth it every penny to just buy the amzing sauce. Linda, the ever-efficient one, the one who takes her newspaper and all of Portlandia happenings very seriously {not kidding....she even called and left a message for the paper in regards to a matter she felt needed to be addressed} saved the newsapaper with a recipe for the YUMM SAUCE! She didn't mention it, because she thought we may have caught it and would have e-mailed her. We laughed so hard! Needless to say, I will be trying this one more time. I will be extremely critical in taste testing, because, although I would love to make it from scratch, I am fine with buying it. That was part of her SHOW-N-TELL. {If you happen to be an English teacher, please stop reading this. I know there are incomplete thoughts, sentences, run on sentences, paragraph problems etc.} Thank YOU!

Linda also brought an album she had already put together from their Spring Break trip to SUNRIVER. It was adorable and detailed. Miss overachiever! She had us drooling over a cupcake hot spot in Bend! can't wait to try it. They went snowshoing for free with a history lesson given by three rangers. She also finds THE DEALS. Anyway, for stressing out over her assignment, she brought great ideas!

Julia is off-the-hook forever because she brought our COOKBOOKS. Her very newest HOT OFF THE PRESS newest cookbook, THE VEGAN DINER. It is available at AMAZON for $12.90. If you buy two you can get free shipping and handling. I hope you go buy one. My hubby is by no means vegan and HE LOVES HER COOKING!!
So, we got our books signed and we were both very happy campers. Julia also filled us in on her new, exciting endeavors and shared favorite brands, tips, gluten free sources etc. etc. We love our ever fun, embarking on new adventures friend!

I have been dying a thousand deaths waiting so patiently to pack my show-n-tell up and show it off. {It is okay. It is allowed. That is what SHOW-N-TELL is for...but only then.} My bestie made me a party in a box. I had the banners up for most of the month of March and I snuck out a few straws, but other than that...I left it intact, so they could be just as excited as I was when I opened it up. THEY LOVED IT! The new mommas sitting next to us...trying to mind their own business, were even drooling! It was fun having them love the talent of Kim and talk so highly of my bestie. Don't you just love complimenting friends and hearing others talk about your friends with such admiration! I DO! It makes you not want to listen to any gossip and certainly not be involved in gossip in any way, shape or form!!!

Back to the box. Her thoughfulness and creativity was so evident. I loved the Gelato cups {I had her save the used ones the last time she met friends for Gelato downtown. What a friend!} The blue and white souffle cups were over the top cute and her re-usable posie cupcake toppers are to-die for! I loved everything, but her card to me and the silhouettes of my children {available on her ETSY shop} were most prized...everything else was the cherry, sprinkles, and a dollop of whipped cream on the very tippy top! Love you, BUNNY!

I love my friends and feel blessed that God has given each one of them to me! They add zest to my life and I am so thankful that Jesus, himself ordained the gift of friendship. They are part of His plan. What joy life is with friends who love you for YOU!
