Classic Picnic Coleslaw



Happy Happy Friday!!

We are in full PICNIC mode here now, and I LOVE it oh.so.much!
Packing a picnic is part of the fun!
There is something wonderful about dining outside with family and friends while taking in the beauty of God's incredible creation...and the best part is leaving the dirty house and dirty windows HOME!

After many picnic mishaps, there are a few things I have learned.  One of them is this:
MAKE SURE YOUR FOOD IS PICNIC-FRIENDLY.
This means that it needs to travel well. :}

One of my favorite cookbooks was gifted to me by my hubby's grammy.
The title:  CLASSIC AMERICAN RECIPES.
It was published by Better Homes and Gardens and the recipes are simple and delicious.
Every time I browse through it, I am reminded of what a classy lady she was and her love of cooking for those she held dear!  Did you have a grammy like that?

The classic picnic coleslaw has been a go-to, but I found one that took it up a few notches, so, nooooow...I am going to share my new go-to picnic coleslaw.  Maybe you will add it to your picnic faire!  {I am not a huge fan of trying new recipes unless they are given to me...but this one reminded me of the one I already loved:  1 whole head of cabbage, onion, sugar and vinegar...YUMM!}


Classic Picnic Coleslaw

1 small head of cabbage

1 carrot

1/4 cup chopped onion

Dressing:

1/2 cup BEST FOODS mayonnaise

1/3 cup sugar

1/4 cup milk

1/4 cup buttermilk

2  1/2 tablespoons freshly squeezed lemon juice

1  1/2 tablespoons rice vinegar

1/2  teaspoons sea salt

1/8 teaspoon pepper

Directions:

*Chop until cabbage is finely chopped.

*Shred carrot and chop onion fine.

{If you have a food processor, you can just process the cabbage, carrot and onion if you like}

*Combine and whisk the dressing ingredients in a bowl and pour over the slaw.

Cover and refrigerate for several hours.

Pack into a sturdy bowl with a tight lid.  Make sure it is kept cold.  :}

VARIATION:  Add 1 tablespoon of poppy seeds
