Italian Market Salad

 
 
 
As our backyard is slowly showing signs of Autumn, I have been filling our weekly menu with the last of Summer fare...lots of garden veggies, berries, and pasta salads!
 
Italian Market Salad
{Thank you, Kirby!!}
 
4 oz. uncooked bowtie pasta
1 cup grape tomatoes, sliced lengthwise
6 cups spinach, 1 large bunch
1 cup Gorgonzola
1/2 of a small red onion, diced
1/4 cup olive oil
1/4 cup Balsamic vinegar
1 clove garlic, minced
 
salt and pepper to taste
1/4 cup toasted pine nuts
 
Cook pasta according to package directions.
 
 
 
Drain and rinse with cold water.
 
 
 
Add a bit of olive oil.
Mix with greens, tomatoes and cheese and onion.
Toss with olive oil, vinegar and garlic.
Salt and pepper if desired.
Top with pine nuts.
 
 
If you are taking this on a picnic, pack the dressing in a canning jar and drizzle over the salad before serving, and then top with pine nuts!!!
