It has been entirely too long since we have had a giveaway around here, don't you think? I so love hearing from all of you and getting to know you more as time goes by! Even my family knows a few of you by name which is really fun!
Since it has been brought to my attention that I talk alot about DEMARLE products, I thought I would share one with YOU! I love DEMARLE and it has made baking and cooking way more enjoyable. This is what I made in my eclair tray today: Cream Cheese Stuffed Pumpkin Twinkies...a version of this!
To make it really easy...I used a box of Trader Joe's Pumpkin Muffin mix {THANK YOU, JESS! }
Cream Cheese Stuffed Pumpkin Twinkies
Lisa Pearson
Make 1 box of Trader Joe's Pumpkin Muffin mix
Follow directions on box
Add 1/2 tsp. cinnamon
Place pan on perforated baking sheet
Fill DEMARLE eclair pan with about 1/4 cup per well
Place in 350* oven for about 10 minutes.
Let cool.
Cream Cheese Frosting:
2 cups powdered sugar
2 cups softened cream cheese
1 tsp. pure vanilla extract
Mix until creamy
Fill pastry bag with frosting and frost bottom "pumpkin bar" and place another "pumpkin bar" as the top. Easy peasy!
ENJOY!!!

These pumpkin Twinkies are so cool. They look so good and I love the way you dressed them up with the burlap and ribbon. Awesome! I don't have a Trader Joe pumpkin muffin mix. Do you have a suggestion for a substitute?
