Sweet Carmel Apple Cake {in mini jars}



Happy Happy September! Can you believe September is here? Once again, school is right around the corner and so is apple pickin' in the orchards!! Here is an easy recipe for the cooler, crisp days ahead...


Sweet Carmel Apple Cake
{In mini jars}

Adapted from A Taste of Oregon



Cake Ingredients:
2 cups sugar
1 cup unsalted butter
2 cups flour
2 TBSP. soy flour or 2 eggs
2 tsp. baking soda
2 tsp. cinnamon
½ tsp. sea salt
4 medium Granny Smith Apples, {or Gravenstein} cored and chopped
1 tsp. pure vanilla extract

Cake Directions:
• Cream together sugar, butter and soy flour
• Add dry ingredients to mixture
• Add chopped apples and vanilla
• Mix together in stand mixer with flat beater
• Bake in greased Bundt pan at 350 for about 45 minutes
OR
In about 8 greased pint canning jars for about 35 minutes. Each jar should be filled with a little less than 1 cup of batter. Let cool a bit, top with vanilla ice cream and sauce.

Sauce Ingredients:
½ cup packed brown sugar
½ cup sugar
½ cup unsalted butter
½ cup evaporated milk
½ tsp. pure vanilla extract
Sauce Directions:
Combine sugars, butter and milk in small saucepan.
Bring to a boil.
Add vanilla and a bit of salt

These are THE BEST baked before your company arrives. No dishing up to do…be sure to pre-scoop ice cream into a storage container! ENJOY!
