I love getting ideas from restaurants and trying to figure out how to make the same things at home! Here is a quick recipe! Use them as appetizers or as a meal. I like serving rice, broccoli, apple slices and a fizzy drink for a quick, nutritious dinner.
Thai Tortilla Spring Rolls

1 package Organic Tortilla Shells from Trader Joe's
1 12 oz. package bean sprouts
4 carrots, shredded
3 green onions, thinly sliced
2 garlic cloves, minced
4 Tbsp. olive oil, divided
2 chicken breasts, thinly sliced {I like to let my chicken soak in salt water overnight and then I drain it and rinse it until the water runs clear}
1/2 cup soy sauce
Extra olive oil for brushing on spring rolls
Shredded pepper jack cheese
*Saute prepared veggies in garlic and in 2 Tbsp.olive oil. {drain. Set aside}
*Saute chicken in 2 Tbsp. olive oil... add soy sauce and salt and pepper to taste
*Line tortillas up. Put a large spoonful of cooked veggies and cooked chicken onto tortillas.
*Top with a bit of pepper jack cheese. Drizzle a bit of peanut sauce down the center. Fold in ends toward the center. Roll up. Brush with olive oil.
*Bake at 350* for about 10 minutes or until spring rolls are golden brown.
PEANUT SAUCE:
Juice of 1 lime
¼ cup hot water
½ cup crunchy peanut butter
3 tablespoons sesame oil
6 tablespoons soy sauce
1/3 cup Agave Syrup {Trader Joe's or Costco}
3 tablespoons fresh ginger, sliced for measuring purposes
4 garlic cloves
1 jalapeno
Blend all ingredients together in blender until smooth. Pour into canning jar or in
to recycled glass container. Will keep up to one week in fridge.
To make this fast:
*Use chicken from a rotisserie chicken OR skip the chicken altogether!!!
*Pre-shredded cheese and carrots
*Store-bought peanut sauce...VOILA! Trader Joe's has a really GOOD one you may want to try.

This and That...
Tonight is date night with my hubby!!! Like...get dressed up, high heels, little black dress...and actually do something with my hair aside from pulling it up into a pony tail kinda date night!!! We are going to the JOSH GROBAN concert...and I can't wait! We take turns planning dates and this one was his idea. So, from 3 o'clock on...he's got the afternoon/evening planned! I just told him I need to be home by midnight...because we know what happens when the clock strikes twelve...CINDARELLY, CINDARELLY!!!

ReplyDeleteyum, yum, yum, I had these at a Vietnamese restaurant back in 2007 and haven't had them since. Always wondered how to make them. I can't wait to try them!! :)
