Hot and Sweet Deviled Eggs



Good Monday morning! It feels like we are in the dead of winter here in Portland! Honestly. Aside from the peonies popping their little heads through the mud, spring is nowhere in sight. SOOO...to add a bit of sunny yellow to your day, how do deviled eggs sound?

It seems that whenever deviled eggs are served, they are the first to go. Don't you think so? You know if you don't take two on the first time around there will be no seconds, but you mind your manners and only take one and hope that maybe there might be a few left...OR you finish off your kiddie's leftovers.

Deviled eggs are great because you usually have all the ingredients on hand, {unless you are VEGAN!} they are quick to put together, and they are inexpensive.

Well, I have to admit I bought Trader Joe's HOT AND SWEET MUSTARD because #1 I loved the jar and #2 I loved the font on the jar, but when I was making deviled eggs to make it feel a bit springy around here, I added it into the deviled egg filling. DELICIOUS! PERFECT! AND the color is beeuteeful!

This is all you need:

Hard boiled eggs

Best Foods Mayonnaise

Trader Joe's Hot and Sweet Mustard

Salt and pepper to taste

Directions:

Slice eggs lengthwise

Place egg yolks in bowl

Add mayonnaise til the egg yolks are moist

Mash egg filling until all lumps are small

Add mustard to taste

Add salt and pepper to taste

Place egg filling in pastry bag {or a Ziploc bag with tip cut off}

Fill each egg white half. Taste at least one and chill until ready to serve
